Ingredients
- Meat of your choice
- Big pot of water for pasta
- Pasta of choice
- Penchatta
- Carrots (chopped finely)
- Garlic (chopped finely)
- Onions (chopped finely)

Preparation
Step 1
1. Preheat skillet for meat sauce – while that’s cooking put on a big pot of water once the water is boiled add whatever pasta.
2. In the skillet add some cut up panchata add your beef once it’s cooked a little – then add your onions and carrots. Grate in some garlic. Add in some allspice and some salt and pepper and 1 bayleaf.
3. Sauce#2 – cut garlic in half and rub on the bottom of another skillet. 2 tablespoons of butter once the butter is melted add 2 tablespoons of flour – whisk together.
4. Once the flour and butter are fully whisked and incorporated add 2 c of milk – add salt and pepper and a pinch of nutmeg. Let this thicken up.
5. To your meat sauce – add to tablespoons of tomato paste and a shot of red wine. To this add a cup of chicken stock.
6. Once all the sauce are done and the pasta is cooked to your liking – mix both sauce in with the pasta.
**SALADE**
I clove garlic; 2 tablespoons of Dijon; some lemon zest and juice – salt and pepper to taste; ¼ c olive oil. 1 can of cannellini beans and escarole – mix with dressing.
