Ingredients
- 1/4 cup olive oil
- 1 large sweet onion, chpd
- 1 green pepper, chpd
- 1 red pepper, chpd
- 2 tsp garlic, minced
- 1 eggplant, peeled and chopped
- 1 large zucchini, chopped
- 2-3 cups mushrooms, sliced
- 1 lg. can stewed tomatoes
- salt and peppper
- 1 tsp. each parsley, oregano and basil
- 1/4 - 1/2 tsp red pepper
- 2 c. mozzarella
- 1/2 c. parmesan cheese
- 1 - 2 Boboli pizza shells

Step 1
Saute onion and peppers in oil for a few minutes. Add eggplant, zucchini, garlic and spices and simmer a few more minutes. Add tomatoes and mushrooms and simmer for about 5 – 10 minutes.
Drizzle a little olive oil on pizza shell and sprinkle with a little garlic salt. Using a slotted spoon to strain off some of the liquid, put veggies on pizza shell. Add mozzarella and parmesan and bake at 400 for 20-30 minutes. Let set a couple minutes before cutting.
