Kiffles, traditional and delicate Hungarian pastries, are colorful and tasty additions to holiday cookie trays. The dough for kiffles can be made with cream cheese or sour cream. The dough, which also contains flour, egg yolks, flour and baking powder, should be refrigerated overnight before trying to roll it.
If the dough is too sticky to work, sprinkle the surface of your work board or counter with powdered sugar instead of flour. It will add a little sweetness to the dough.
Mix cream cheese and butter together. Add egg yolks. Continue working the dough until it is well-blended. Add flour and baking powder and mix well. Chill the dough overnight in the refrigerator. Powder your work board with confectioners' sugar, roll out the dough and then cut it into squares. Fill with apricot, lekvar or walnut filling. Gently press together two opposite corners of each square. Lightly brush the tops of the kiffles with egg whites. Bake each tray at 350 degrees for 12 to 15 minutes. After they've cooled, sprinkle them with powdered sugar. Just before serving them, sprinkle them with more powdered sugar if necessary.
