Basic Beer Cheese Bread

Ingredients
- 1 T. olive oil
- 1/2 c. finely chopped onion
- 1 garlic clove, minced
- 3 c. flour
- 3 T. sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 c. shredded Monterey Jack cheese
- 1 (12 oz) bottle lager-style beer
- 2 T. melted butter, divided

Step 1
1.) Preheat oven to 375
2.) Heat oil in small skillet over med-low heat. Add onion to pan; cook 10 min or until browned, stirring occasionally. Stir in garlic, cook 1 min.
3.) Lightly spoon flour into dry measuring cups, level with a knife. Combine flour, sugar, baking powder, and salt in a large bowl, stirring with a whisk. Make a well in center of mixture. Add onion mixture, cheese, and beer to flour mixture, stirring just until moist.
4.) Spoon batter into 9x5 in loaf pan coated with cooking spray. Drizzle 1 T butter over batter. Bake for 35 minute. Drizzle remaining 1 T butter over batter. Bake for additional 25 min or until deep golden brown and a toothpick comes out clean. Cool in pan 5 min.
