Ingredients
- 1 1/2 cup sweet potato
- 1 1/4 cup onion
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp basil
- 1/2 tsp parsley
- 1 tsp oregano
- 1/4 tsp black pepper
- 2 tablespoons extra virgin olive oil
- 2 celery stalks
- 1 cup bell pepper
- 1 cup haricots verts
- 1 cup grape tomatoes
- 1/2 tbsp balsamic vinegar
- 4 cups chicken stock
- 3 cups water
- 1 cup canned chopped tomatoes
- 1 shallot
- 2 tablespoons tomato paste
- (you can also add corn, carrots, and/or beans to make it really hearty)
- 1/2 tsp more salt
- 1 tsp sugar

Step 1
Sautee the onion, bell pepper and shallot in the olive oil. Next, add the sweet potato and the butter, sautee for just a few minutes. Add the rest of the vegetables, but not the tomatoes, along with all the spices. Add just 1 cups of the chicken stock and balsamic; stir then cover and let it cook on low for about ten minutes. Add the rest of the chicken stock, water, tomato paste, tomatoes and canned tomatoes.
Continue cooking covered on low for about 45 minutes or until potatoes are soft. Stir in the rest of the salt.
