Ingredients
- 1/4 cup dry white wine
- 1/4 cup white wine vinegar
- 1 shallot, minced
- 4 sprigs tarragon
- 3 egg yolks
- 1 cup clarified butter
- 1 tbsp chopped tarragon

Preparation
Step 1
Combine the wine, vinegar, shallots and tarragon in a saucepan. Bring to a boil and reduce till only 2 tbsp, then strain. Follow traditional hollandaise procedure using strained reduction and chopped tarragon for garnish.
