LIME & GINGER SHRIMP

Ingredients
- 2 lb medium-sized shrimp, peeled and deveined
- 2 tbsp grapeseed oil
- Zest of 4-5 limes, finely minced (use hasp)
- Juice of 1-2 limes or lemons
- 3 tbsp fresh grated ginger (use zester or hasp)
- Sea salt
- 1 tbsp chili sauce, such as Sambal Olek

Preparation
Step 1
Coat shrimp with oil and chill (can be left overnight). Combine zest, juice, ginger and add to shrimp. Add chili sauce and salt and toss. Chill for up to 1 hour.Shrimp can be grilled or cooked in a hot oven (425F), until cooked through (pink and curled). Can be served on small skewers.
