Preparation
Step 1
Heat oven to 200F, then turn off and turn light on. Grease very large bowl with shortening. Grease large mixing bowl with shortening. Put milk and beaten eggs into large mixing bowl. Measure 4 cups flour into each of two mixing bowls and add yeast to one of the bowls.
Mix together sugar, 1/2 cup flour, salt, melted butter and boiling water. Cool to lukewarm. Slowly add liquid mixture to egg mixture, stirring constantly. Add 1/2 of the flour/yeast mixture to the liquid mixture and mix together on slow speed (scrape down sides of bowl). Add rest of flour/yeast mixture. When well mixed, add rest of flour and mix together on slow speed. When flour is mixed in, increase speed to 6-8 and mix for 5 minutes.
Grease hands and punch down a bit. Grease top of dough and cover with a tea towel. Place in oven for 30 minutes or until risen about top of bowl. Punch down a bit, cut with a sharp knife and shape into rolls.
Place on greased cookie sheets, well apart. Cover with a tea towel, put in oven and let rise until double plus in size for 30 minutes. Remove from oven. Heat oven to 350F. Bake for 20 minutes. After baked, place butter on waxed paper and brush tops of buns with butter.
