Ingredients

  • 2 pounds new potatoes
  • 3 tablespoons white vinegar
  • 1 tablespoon canola oil
  • 1/2 cup chopped celery
  • 1/2 cup red onion, minced
  • 2 tablespoons sweet pickle relish, drained
  • 3 eggs, hard-boiled, chopped
  • 3/4 cup low-fat mayonnaise
  • 2 tablespoons prepared mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preparation

Step 1

1. Place potatoes in saucepan, cover with water. Bring to boil. Reduce heat; simmer 10 mins or until tender. Drain.

2. Cool and peel. Cut into ½" cubes. Place in large bowl; sprinkle with vinegar and oil.

3. Add celery-eggs; toss gently.

4. Combine mayo-s&p. Spoon over potatoes; toss gently to coat. Cover and chill 1-24 hrs.

Very good basic potato salad - worth making again for something traditional
