Ingredients
- 3 Tbsp butter
- 1/2 cup sugar
- 2 cups finely chopped pecans
- 1 1/2 cups powdered sugar, plus an extra 1/2 cup for rolling dough
- 1 (12 oz) box Nilla Wafers, finely crushed (about 2 3/4 cups) in food processor
- 1/2 cup cocoa
- 1/4 cup corn syrup
- 1/2 cup dark rum

Preparation
Step 1
Melt butter in a saucepan over medium heat. Combine butter, sugar and pecans in a medium bowl and stir well. Spread pecan mixture in a thin layer on a cookie sheet and toast for 5-10 min in a 350 degree oven. Let cool a few min.
In a mixing bowl, combine powdered sugar, Nilla wafers, cocoa, corn syrup, dark rum and toasted mixture. Mix well and then form into 1" balls. Roll in extra powdered sugar and refrigerate.
