Preparation

Step 1

Heat oven to 200F, then turn off. Turn oven light on. Grease large mixing bowl. Put cold water and beaten eggs into large mixing bowl. Measure flour into mixing bowl and add yeast.

In small saucepan, heat milk, sugar, butter and salt until butter has melted. Let cool to lukewarm. Add to water/eggs mixture.

Slowly mix in flour, scraping down sides of bowl. When well mixed, increase speed to 6-8 and mix for 5 minutes. Grease hands and punch down a bit. Grease top of dough and cover with a tea towel. Place in oven for 30 minutes or until doubled in size. Punch down a bit.

On lightly floured surface, roll dough into 20x14" rectangle. Brush with filling mixture (melted butter and brown sugar), sprinkle with cinnamon (leave 1/2" border uncovered). Roll up and cut into 30 pieces. Place warm topping and pecans in 12x9" baking dish and add cinnamon rolls. Let rise in warm oven for 30 minutes.

Remove from oven. Heat oven to 350F. Bake for 25-30 minutes or until crusts are golden. Let stand in pan for 3 minutes. Invert onto serving platter or cookie tray, scraping off any remaining filling in pan to drizzle over cinnamon rolls.
