Ingredients
- 1/3 cup fresh lemon juice
- 1/4 cup low sodium soy sauce
- 1 medium garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp black pepper
- 2 lb boneless skinless chicken breasts
- 1 cooking spray

Preparation
Step 1
1 In 13" x 9" x 2" baking dish, stir together lemon juice, soy sauce, minced garlic, salt, ginger, and black pepper.
2 Add the chicken, cover, and marinate in refrigerator for 2 to 3 hours, turning once.
3 Preheat oven 325°F.
4 Coat rack of roasting pan with cooking spray.
5 Drain and discard the marinade; transfer the chicken roasting pan.
6 Bake the chicken for 1 hour at 325°F or until internal temperature reaches at least 180°F.
7 Remove chicken from oven and let rest for 5 minutes. Slice and serve.
