Soft polenta with mascarpone

Ingredients
- 6 tbsp butter
- 1/2 small onion, minced
- 1 clove garlic, minced
- 4 cups chicken stock
- 2 cups polenta
- 1/4 cup mascarpone cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper
- Fresh oarsley, chopped

Preparation
Step 1
Melt 2 tbsp butter in a large saucepan over medium. Add onion and garlic and cook until onion is translucent, 5 minutes.
Add chicken stock and bring to a simmer.
Slowly whisk in polenta. Reduce heat to low, and cook, stirring frequently, until polenta is thick, 2 hours. Adjust consistency with stock if necessary.
Remove from heat and whisk in mascarpone, Parmesan, and 4 tbsp butter. Season with salt and pepper, garnish with chopped parsley.
