Toffee Shortbread Cookies
- 1 c butter, softened
- 1/2 c powdered sugar
- 1/2 t vanilla
- 1/2 c cornstarch
- 1 c flour
- 1/2 c toffee bits
Preheat oven to 325F. Line baking sheet with parchment paper.
Cream the butter, powdered sugar and vanilla until light and fluffy.
Sift the cornstarch and flour together. Add the mixture to the butter mixture and stir until dough forms. Mix in the toffee bits.
Scoop dough and shape into 1 inch ball (it helps to refrigerate first and flour hands). Place the balls 2 inches apart on baking sheet. Bake for 12-14 minutes just until set and bottoms begin to turn a light, golden brown. Cool for 2 minutes than transfer to a wire rack.
