Flourless Peanut Butter Chocolate Chunk Cookies

- 1 1/4 cups peanut butter, smooth or chunky
- 3/4 cup firmly packed light brown sugar
- 1 large egg
- 1 tsp. baking soda
- 1/2 tsp. vanilla extract
- 1 cup semisweet mini chocolate chips, or 1 bittersweet bar chopped fine

Preheat the oven to 350 degrees. Grease two cookie sheets or line them with Silpat.
In a large bowl, mix the peanut butter, sugar, egg, baking soda and vanilla extract until it is smooth and creamy. Stir in the chocolate.
To form each cookie into a ball, I use a small ice cream scoop, but you can also use your moistened hands. Place the dough on two ungreased cookie sheets; they don't spread a lot.
Bake the cookies 12 to 15 minutes, depending on the size you made, or until they are puffed and golden on the bottom. They will still be soft in the center. Cool them on the cookie sheets for a few minutes and then transfer them to a rack until they are completely cool.
