Ingredients
- 1 1/2 c butter or margarine, softened
- 1 c sugar
- 1 egg
- 1 tsp vanilla extract
- 2 tsp lemon extract
- 1 T lemon zest
- yellow food coloring
- 4 c sifted flour
- 1 tsp baking powder
- ICING
- 1 c confectioner's sugar
- 2 T milk
- 1 tsp lemon extract
- yellow food coloring
- poppy seeds

Preparation
Step 1
Thoroughly cream butter or margarine and sugar. Add egg, vanilla, lemon extract and lemon zest; beat well.
Sift together flour and baking powder; add gradually to creamed mixture, mixing to a smooth dough.
Force dough through cookie press, using a star or swirl shape, onto ungreased baking sheet. Bake at 400° for 8-10 minutes. Cool.
Icing-Sift the powdered sugar and add lemon extract. Add milk a little at a time. You want the result to be a thin frosting. Add food coloring and stir until blended.
Make the color of the frosting paler than the cookies. Place into a small ziploc bag. Cut a small hole in one corner. Starting in the center of each cookie, make a spiral going out to the edges. Sprinkle with poppy seeds, and let icing set.
