Ingredients
- Non-aerosol cooking spray
- 2 (4-oz.) cans diced green chilies, drained
- 3/4 cup frozen corn, thawed
- 4 green onions, thinly sliced
- 1 cup shredded low fat Cheddar cheese
- 1 1/2 cups skim milk
- 6 large egg whites
- 4 large eggs
- 1/4 teaspoon salt

Preparation
Step 1
Preheat oven to 400 degrees. Coat a casserole dish with cooking spray. Combine green chilies, corn and scallions. Top with cheese. Whisk milk, egg whites, eggs and salt in a medium bowl until combined. Pour the egg mixture evenly over casserole. Bake for about 30 minutes, or until the top begins to brown and the eggs are set.
