  • 1 lb. boneless skinless chicken breast; cut into 1 inch pieces
  • 3 1/2 cups chicken broth
  • 1 tsp. ground cumin
  • 1/2 cup uncooked long grain rice
  • 1 (11oz) can whole kennel corn with red and green bell peppers, drained
  • 1 cup thick and chunky salsa
  • 1 tbsp. chopped cilantro
  • 2 tbsp. lime juice
  • 4 corn tortillas



Step 1

1) Spray 6qt sauce pot with cooking spray. Heat over medium-high heat for 1 minute, then add chicken. Cook until browned.

2) stir in broth, cumin, and rice. Bring to boil, reduce heat to low, cover and cook for 20 minutes

3) Stir in corn, salsa, cilantro, and lime juice. cook until rice is done
