MY NOTES: I made these for Christmas 2014. They were one of the first cookies I made (about a week before Christmas) and they tasted just as good on New Years day. I used coconut oil instead of the shortening. They were great!

Ingredients

  • 1/2 c shortening
  • 1/2 c butter, softened
  • 2/3 c brown sugar
  • 1/3 c maple syrup
  • 1 egg
  • 2 3/4 c all-purpose flour
  • 3/4 tsp ground coriander
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Preparation

Step 1

Place shortening and butter in large bowl. Beat until fluffy.

Add brown sugar and maple syrup; beat until thoroughly creamed. Add egg; mix well.

Combine remaining ingredients in a separate bowl. Gradually add to creamed mixture until well blended.

Fill cookie press. Press cookies on ungreased, uncoated cookie sheets.

Bake at 375° for 9-11 minutes.
