Ingredients
- 1 cup dried beans of your choice
- 1/2 cup small dried pasta or wild rice
- 1/2 cup couscous
- 3 medium tomatoes, diced
- 1 medium red salad onion, finely diced
- 1 large bunch parsley, finely chopped
- 1 teaspoon dried mint
- 2 lemons - use juice and zest of both
- 1/4 - 1/2 olive oil
- Freshly ground black pepper

Step 1
Prepare the first three ingredients according to instructions on packets, and cool as quickly as possible. Combine all ingredients in a large bowl and mix gently.
This recipe is highly flexible - use whatever beans or pasta you have in the cupboard or your family prefer, and vary the quantities of ingredients to your taste. Sorry its a salad, but its the height of summer in Australia!
I use the dried mint because it keeps better in the salad than fresh.
