Ingredients
- 3 tbsp canola oil
- 1 , 3 lb piece of salmon, skin on
- 1/2 cup honey
- 4 tbsp mustard
- zest of 1 lemon
- hot chili flakes to taste
- 4 tbsp minced fresh thyme or sage
- salt to taste
- lemon, cut in wedges, for garnish
- sprigs of thyme or sage for garnish

Step 1
Soak cedar plank in water for several hours. Preheat oven to 450F or BBQ to medium-high.
Brush the wood with oil and lay the fish skin side down onto the wood. Mix together the honey, mustard, lemon zest, minced herbs, hot chili flakes and salt.
Brush the exposed surfaces of the fish with half the glaze, then transfer to the oven or grill.
Don't overcook; allow about 7 minutes per inch of thickness. To test, use a sharp knife to separate several flakes at the thickest part. When done, it should no longer transparent, but opaque.
