Ingredients
- 1 9" pie tin, lined w/unbaked piecrust
- 3 lg eggs
- 3/4 c sugar
- 3 T flour
- 1-1/2 c low-fat buttermilk
- 1 t vanilla
- 3 T fresh lemon juice
- 1 t grated lemon rind
- 1 t butter, melted
- 1/2 t ground nutmeg

Preparation
Step 1
1. Preheat oven to 350F.
2. Cover unbaked pie shell w/parchment paper or a coffee filter.
3. Press down to fit & toss in a handful of dried beans.
4. Place weighted shell in preheated oven & bake for 10 min.
5. Remove from oven & empty out beans.
6. Discard parchment & set pastry shell aside.
7. Raise oven to 375F.
8. Beat eggs & sugar until light & lemony colored.
9. Add flour & beat until well mixed.
10. Add buttermilk, vanilla, lemon juice, lemon rind, & butter.
11. Pour into baked crust & dust w/nutmeg.
12. Bake for 25-30 min.
13. Cool slightly on wire rack before serving.
