Ingredients
- 2- 10 oz pkgs of baby spinach, washed
- 3-4 TB butter
- 1 onion, diced
- 2 garlic cloves, minced
- 3-4 TB all purpose flour
- 2 c milk
- 1/2 c grated parmesan cheese (opt)
- 1/2 tsp white pepper or nutmeg as desired

Step 1
Cook spinach in a pot of boiling water for just one minute. Add to a cold water bath to stop the cooking, then squeeze out the excess water from the leaves. Chop spinach (or use food processor) and set aside.
Sauce: melt butter in saucepan. Add the garlic and onion and cook until just soft. Add in the flour, stirring together to form a paste. Slowly whisk in the milk and cook until slightly thickened. Stir in the parmesan, add the spinach and prosciutto, and pepper (nutmeg) and salt.
