Simple, quick and tasty ball cookies covered with Confectioner's Sugar

The mixture of butter and oatmeal makes your hands nice and soft when you're done rolling the cookies. And as my Mother tells us (now that we're adults), because there's oatmeal in them ... we can eat them for breakfast!

Ingredients

  • 1 Cup butter (softened)
  • 1/4 Cup Confectioner sugar
  • 1 Teaspoon Almond or Vanilla extract
  • 2 Cups flour (sifted)
  • 1-1/2 Cups Oatmeal

Preparation

Step 1

1. Cream butter and confectioner sugar.
2. Add the Almond - or - Vanilla extract
3. Add the sifted flour and mix well.
4. Add the oatmeal and mix well
5. Roll and shape into small balls
6. Place on uncreased cookie sheet
7. Bake at 350 degrees 13-15 minutes (until lightly browned on the bottom)
8. Remove from oven
9. Roll each ball in a bowl of confectioner sugar while hot.
10. Repeat when cooled to get a good coating.

Makes about 3-1/2 dozen.
