Ingredients
- 2 1/2 - 3 pounds short ribs or flanken
- flour
- salt and pepper to taste
- 2 medium onion sliced
- 1 green pepper, sliced
- 2 carrots, chopped in 1 inch pieces
- 1 cup dry red wine
- 1/2 teaspoon dry mustard
- 1/2 cup chili sauce
- 2 tablespoons brown sugar
- 3 tablespoons red wine vinegar
- 1 tablespoon Worcestershire Sauce

Preparation
Step 1
Roll short ribs in flour, salt and pepper to coast all sides. Heat oil in Dutch oven and add short ribs, cooking slowly until well browned. Mix sauce ingredients and reserve for later. Add onions to short ribs and brown lightly. Add sauce,carrots and green pepper and cover. Cook over low heat until tender.
( I prefer to cook in the oven on a low temperature)
