Ingredients
- 1 1/2 pounds boneless skinless chicken thighs
- 1 cup chopped onion
- 1 (14.5-oz.) can low sodium chicken broth
- 2 tablespoons minced garlic
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 2 tablespoons lemon juice
- Hot sauce, to taste
- 2 (15-oz.) cans Great Northern beans, drained
- 1 (15-oz.) can white shoe peg corn, drained

Preparation
Step 1
Combine all ingredients in slow cooker, except beans and corn. Cover and cook on LOW for 6 to 8 hours. Remove chicken and shred with 2 forks; return to slow cooker. Add beans and corn; cover and cook for 30 minutes.
SERVING SUGGESTION: Serve corn muffins and butter on the side. Add a big salad.
VEGETARIAN: Throw in some extra beans and corn for a great veggie chili.
KOSHER: No changes necessary.
