Ingredients

  • 2 ounces sliced almonds
  • Non-aerosol cooking spray
  • 6 (4-oz.) boneless skinless chicken breast halves
  • 1 1/2 cups fat free half and half
  • 2 tablespoons orange marmalade
  • 1 tablespoon Dijon mustard
  • 1/8 teaspoon ground red pepper
  • 1/4 cup fat-free mayonnaise

Preparation

Step 1

Saute almonds in a skillet coated with cooking spray until fragrant, but don’t let them burn; remove from skillet and set aside. Add chicken to the skillet and saute until browned (you’re not cooking chicken all the way through); reduce heat to medium. In a blender, process half and half, mustard, marmalade, pepper and mayo. Pour over chicken and cook for 10 minutes or until sauce has thickened and chicken is cooked through; sprinkle with almonds.

SERVING SUGGESTION: Whole wheat couscous and steamed broccoli.
VEGETARIAN: Use non-breaded faux chicken patties.
KOSHER: Use a non-dairy cream such as MimicCreme.
