Ingredients

  • 130 g ........................................ All purpose flour
  • 1 tsp ......................................... Baking powder
  • 1 tbsp ........................................ Green tea powder
  • 1/4 tsp ....................................... Salt
  • 80 g ........................................... Granulated sugar
  • 80 g .......................................... Shortening (non-hydrogenated shortening)
  • 1 ............................................... Egg
  • 1 tbsp ....................................... Milk
  • 1/4 tsp ...................................... Vanilla extract
  • 1/8 tsp ...................................... Almond extract (optional)
  • 35 g .......................................... White chocolate (chopped if large)

Preparation

Step 1

Preheat an oven to 180C.
Line baking sheet with baking paper or silpat.
Sift the flour, baking powder and green tea powder together.
Beat the shortening until softened, add the sugar, salt and beat to combine.
Add vanilla and almond extract and beat to combine.
Pour the egg into the bowl, beat to combine.
Pour the sifted flour mixture into the bowl, fold to combine.
Pour the white chocolate into the bowl (keep some for decorating the top of the cookie), fold to combine.
Scoop the cookie dough onto the prepared baking sheet with 5 cm scoop, and decorate the top of the cookie with the rest of the white chocolate.
Bake for 12-15 minutes.
Let the cookies rest on the baking sheet until firm enough to be moved.
Remove from the baking sheet and let the cookie cool on a wire racks.
