Ingredients
- (6-oz.) boneless skinless chicken breast halves
- 1 1/2 cups chopped onion
- 1/3 cup sun-dried tomatoes, chopped
- 1/3 cup pitted Kalamata olives, chopped
- 2 tablespoons lemon juice
- 1 tablespoon balsamic vinegar
- 3 cloves garlic, pressed
- 1/2 teaspoon salt

Preparation
Step 1
Place chicken in a slow cooker; add remaining ingredients. Cover and cook on LOW for 4 to 6 hours or until chicken is tender and cooked through.
LC SERVING SUGGESTION: Stir-fried zucchini and yellow squash. Add a salad of mixed greens tossed with sliced red onion and crumbled Feta cheese.
SERVING SUGGESTION: Add steamed new potatoes.
