Ingredients
- 2 lb diced chicken breast
- 1 TBS Cajun seasoning
- 16 oz frozen chopped broccoli
- 1 1/2 TBS olive oil
- 1 shallot (chopped) (or small onion)
- 4 garlic cloves (chopped)
- 1 cup long grained rice
- 1 cup water
- 10.75 oz cream of mushroom soup
- 1 cup chicken broth
- 8 oz velveeta (cubed)
- 1/4 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper

- 1 cup water
- 1/3 cup milk
- 8 oz Velveeta (cubed)
- 1 cup uncooked minute rice rice
- 1/4 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 4 chicken breasts (cubed)
- 1 16 oz pkg chopped broccoli

Preparation
Step 1
Preheat oven to 375 degrees.
Spray large frying pan with cooking spray. Pan fry chicken pieces until cooked throughout. (Optional: Season with favorite spices while cooking) Remove from heat and set aside.
In a large bowl, stir soup, water, milk, cheese cubes, rice, onion powder, paprika, black pepper. Blend well. Spray 9x13 baking dish with vegetable spray.
Arrange broccoli evenly in the bottom of the dish. Arrange chicken pieces evenly on top of broccoli. Pour soup mixture over the chicken and broccoli. Use a spoon to spread the mixture around evenly.
Cover the baking dish with foil.
Bake 45 minutes or until the rice is tender.
