  • 1 1/2 cups all purpose flour
  • 1 tsp. salt
  • 3 Tbsp. sugar
  • 1 3/4 tsp. baking powder
  • 2 eggs, separated
  • 1 1/4 cups milk
  • 1 plus 2 Tbsp. melted butter

Step 1

Sift the flour, salt, sugar and baking powder. In a separate bowl combine the egg yolks and milk and gently beat. Temper this mixture by adding 1 Tbsp. of the butter. Mix and then add the remaining 2 Tbsp. butter. Mix well. Add this mixture to the flour mixture, being careful not to overmix. Beat the egg whites until stiff and fold into the pancake mixture. Grill the pancakes on a buttered skillet or griddle over medium heat. Cook until bubbles appear on the surface and the underside is golden brown. Turn the pancakes and continue cooking. Serve with butter and maple syrup.
