Ingredients
- 1/2 lb feta cheese or an un-ripened goat cheese
- 5 3" sprigs each, marjoram, rosemary, oregano (2 Tbsp of dry crushed)
- 3 cloves garlic, peeled
- 5-6 olives
- 1/2 cup olive oil

Step 1
Cut feta into large chunks. If using goat cheese, cut into 1 1/2" thick slices. Fit cheese compactly into a jar or crock, about 1 1/2 cup size. Add herbs, garlic, and olives. Fill jar with olive oil to cover cheese; cover jar and chill at least 5 days. Serve at room temp. Can be stored in the refrigerator for up to 6 weeks.
