Ingredients

  • 3 cans (6oz each) unsalted, water- packed tuna, drained
  • 1 jar (6.5-oz) marinated artichoke hearts, drained & quartered
  • 1/2 C pitted, halved kalamata olives
  • 1/3 C crumbled feta cheese
  • 2 TBL minced garlic
  • 1/2 C sliced red onion
  • 2 TBL sherry vinegar
  • 14 C olive oil
  • 3/4 tsp kosher salt
  • 1/2 C chopped flat-leaf parsley
  • 1 hed butter lettuce

Preparation

Step 1

combine all ingredients except lettuce in lg bowl

arrange a few lettuce leaves on each of 6 plates

spoon tuna mixture on top of lettuce

serve w/ pita chips
