  • 4 pork chops
  • S & p
  • Pinch of paprika
  • 3 cloves garlic
  • Panchatta
  • Onions
  • ¼ c sherry
  • 2 tablespoons thyme
  • 1 big jar Spanish peppers
  • Flat leave parsley

Preparation

Step 1

1. Preheat oven to 375 – coat the pork chops with a bit of olive oil some salt and pepper and a pinch of paprika.
2. In a hot pan brown both sides of the pork chops – then transfer the chops to a baking sheet and cook in the oven for 15 mins.
3. In the pan cook the panchatta and the onions and the garlic. Cook for a few minutes then add the sherry. Now add the thyme, the Spanish peppers, the flat leave parsley. Once it’s heated through a little transfer this mixture into a food processor and grind til completely smooth.
4. Pour it back into the pan and let simmer – serve with pork chops.
