- 2 sticks unsalted butter, room temp
- 1 c powdered sugar, sifted
- 2-1/2 c AP flour, sifted
- 3 TB finely minced crystallized ginger
- 1 tsp ground ginger
- 1/4 tsp salt

Step 1
1. Cream butter with powdered sugar in large bowl. Add remaining ingredients and mix well.
2. form dough into cylinder about 1-3/4" in diameter. Wrap in plastic wrap and refrigerate until firm enough to slice ....2+ hrs in frig, or 45 minutes in freezer.
3. Preheat oven to 400
4. Cut dough into 1/4" slices and arrange on ungreased cookie sheet.
5. Bake about 8 minutes or until lightly brown. Cool on wire racks
