Ingredients
- 1 1/2 pounds boneless beef round steak
- 1 (14.5-oz.) can diced tomatoes, un-drained
- 1/2 cup chopped onion
- 1 to 2 canned chipotle peppers in adobo sauce, chopped
- 1 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1 clove garlic, pressed
- 6 flour tortillas, warmed
- 3/4 cup shredded low fat Cheddar cheese

Preparation
Step 1
Place first 7 ingredients (meat through garlic) in a slow cooker. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours. Remove meat from cooker and shred with two forks. Divide meat evenly on each warm tortilla, just below the center. Top with cheese, roll up and enjoy!
SERVING SUGGESTION: Serve a big salad on the side.
VEGETARIAN: Use 2 cans of drained white beans instead of beef.
KOSHER: Use soy cheese.
GLUTEN FREE: Make sure tomatoes and chipotle peppers are gluten free. Use gluten free tortillas.
