Ingredients
- 1 tablespoon olive oil
- 1 bunch green onions, thinly sliced (white parts only)
- 1 1/2 pounds salmon fillets, cut into 1-inch chunks
- Freshly ground black pepper, to taste
- 3 cups cooked brown rice
- 1/3 cup teriyaki sauce

Preparation
Step 1
Heat the oil in a large skillet over medium heat; add green onions and cook for 3 minutes, stirring occasionally. Season salmon with pepper and add to skillet; cook for 7 to 8 minutes or until opaque throughout, stirring occasionally. Stir in cooked rice and teriyaki sauce until well blended and heated through.
SERVING SUGGESTION: Serve a big spinach salad on the side.
VEGETARIAN: Use extra-firm tofu instead of salmon.
KOSHER: No changes necessary.
GLUTEN FREE: Make sure teriyaki sauce is gluten free.
