Ingredients

  • Non-aerosol cooking spray
  • 2 cloves garlic, pressed
  • 4 beef sirloin steaks, trimmed
  • 1 medium red bell pepper, seeded, deribbed and cut into strips
  • 1 medium onion, thinly sliced
  • 2 medium zucchini, sliced
  • 1/4 cup red wine (or use low sodium beef broth)
  • 1/4 teaspoon thyme
  • 1/4 teaspoon dried rosemary, crushed
  • Black pepper, to taste
  • 1 tablespoon grated non-fat Parmesan cheese

Preparation

Step 1

Coat a large non-stick skillet with cooking spray over medium-high heat; saute garlic just until it becomes fragrant. Add steaks and cook for 2 to 3 minutes per side. Add bell pepper, onion, zucchini, wine (or broth) and seasonings; cook and stir until steaks reach desired level of doneness and veggies are tender-crisp. Remove from heat, sprinkle with grated Parmesan cheese and serve.

LC SERVING SUGGESTION: Faux-Tay-Toes (steam cauliflower till tender; drain; mash with butter, cream cheese and salt and pepper to taste till you get a mashed potatoes texture).
SERVING SUGGESTION: Serve baked russet potatoes instead of Faux-Tay-Toes.
KOSHER: Make sure beef is certified kosher. Skip the Parmesan cheese OR use Parmesan-flavored rice sprinkles.
