Ingredients
- 4 (6-oz.) cod fillets (or other firm-fleshed white fish)
- Salt and pepper, to taste
- 4 thin slices prosciutto
- 1 tablespoon olive oil, divided
- 2 1/2 pounds spinach
- 2 lemons

Preparation
Step 1
Preheat oven broiler. Season fish with salt and pepper to taste. Wrap 1 slice of prosciutto around each fillet; rub with 1 teaspoon of olive oil and place on broiler pan, seam sides down. Broil until prosciutto is browned and fish is opaque, about 8 to 12 minutes. Meanwhile, heat remaining olive oil in a large skillet and add as much spinach as will fit in the skillet; season with salt and pepper. Cook, adding more to the skillet as room permits, until wilted and tender. Sprinkle with juice of 1 of the lemons; toss to combine. Serve cod with spinach and wedges from remaining lemon.
LC SERVING SUGGESTION: Add stir-fried zucchini and yellow squash.
SERVING SUGGESTION: Add steamed red skinned potatoes.
KOSHER: Use soy ham instead of prosciutto.
GLUTEN FREE: Make sure prosciutto is gluten free.
