Ingredients
- 2 Granny Smith apples, peeled, cored and cut into 1/2-inch chunks
- 1/4 cup sugar
- 2 tablespoons raisins
- 1 tablespoon cider vinegar
- 1/2 teaspoon ground ginger
- Pinch of cayenne pepper
- 4 (4-oz.) boneless loin pork chops, trimmed
- Salt and pepper, to taste
- Water/oil mixture

Preparation
Step 1
In a medium saucepan, combine apples, sugar, raisins, vinegar, ginger and cayenne pepper; cook over medium-high heat until sugar dissolves, about 2 minutes. Reduce heat and simmer, partially covered, until apples are soft, about 10 minutes, stirring occasionally; season chops with salt and pepper to taste. Heat a large skillet coated with water/oil mixture over medium-high heat; add pork chops and cook until browned, 3 to 4 minutes per side. Serve topped with apple relish.
SERVING SUGGESTION: Baked sweet potatoes and steamed green beans.
GLUTEN FREE: Make sure vinegar is gluten free.
