Salmon with Spicy Cucumber Salsa 0 Picture

Ingredients

  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1 English cucumber finely diced
  • 1 cup finely diced pineapple
  • 2 scallions, thinly sliced
  • 1 jalepeno pepper, seeded, deribbed and minced
  • 1/4 cup chopped basil
  • Salt and pepper, to taste
  • Water/oil mixture
  • 4 (6-oz.) salmon fillets

Preparation

Step 1

In a medium bowl, whisk together lime juice, honey and vegetable oil; add cucumber, pineapple, scallions, jalapeno and basil; season with salt and pepper. Heat water/oil mixture in a skillet over medium-high heat; add salmon, skin side down. Cook until skin is crispy and salmon is opaque about 3/4 of the way through, 4 to 6 minutes. Turn salmon and cook 2 to 4 minutes longer. Serve topped with salsa.

SERVING SUGGESTION: Steamed new potatoes and steamed asparagus.
