  • 3 Tbsp peanut butter
  • 4 Tbsp granulated sugar
  • 2 Tbsp all-purpose flour
  • 1/8 tsp salt
  • Muffins:
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp granulated sugar
  • 1 egg, beaten
  • 1 cup milk
  • 1/3 cup melted butter

Preparation

Step 1

1. Preheat oven to 400F. Grease a 12-cup muffin tin.

2. In a bowl, combine peanut butter, sugar, flour, and salt; mix with a fork. Set aside.

3. In another bowl, combine flour, baking powder, salt, and sugar. Make a well in the center. In another bowl, whisk together egg, milk, and butter. Add to dry ingredients; stir quickly just until blended. Spoon batter into prepared muffin tin, filling two-thirds full. Sprinkle with topping.

4. Bake in preheated oven for 20 minutes.

Topping was great, muffin just okay
