Ingredients

  • 1 small sugar pumpkin
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1 1/4 cups graham cracker crumbs
  • 3/4 cup brown sugar
  • 1 1/4 tsps. cinnamon
  • 1 tsp ginger
  • 1 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 tsp. salt
  • 2/3 cup real maple syrup
  • 1 1/4 cups light half and half
  • 3 eggs

Step 1

1. Preheat oven to 375.

2. Split pumpkin, remove seeds and scrape out inside of the pumpkin. Place the two pumpkin halves in a large baking pan facedown; cover with foil. Bake for 1 hour or until quite soft. Remove from the oven and let cool. Change the oven temperature to 350.

3. Melt butter in a medium saucepan; add brown sugar; mix well. Add graham cracker crumbs. Press into 9 inch pie plate.

4. Remove pumpkin skin and discard. Puree pumpkin in a blender or use a hand blender.

5. Measure 1 1/2 cups of pumpkin, place in a mixing bowl. Add brown sugar, cinnamon, nutmeg, ginger, cloves and salt. Stir in maple syrup and half and half. stir in eggs one at a time. Pour filling on top of crust.

6. bake for 1 hour or until center is set.
