Ingredients
- 1 (2 to 3 pound) whole chicken
- 1/4 cup butter, softened
- 1 teaspoon lemon pepper
- 1 thick slice of lemon
- 2 cloves garlic, lightly crushed
- 2 tablespoons olive oil
- 2 teaspoons seasoned salt
- 1 teaspoon dried thyme
- cracked black pepper (to taste)

Preparation
Step 1
Rinse chicken, discard giblets, pat dry with paper towels. With your fingers loosen the skin over the breast and thighs.
Mix together butter and lemon pepper in a small bowl. Rub seasoned butter under the skin. Place lemon slice and garlic cloves into the chicken cavity.
Place chicken into the slow cooker. Rub skin with olive oil and sprinkle with seasoned salt, thyme, and pepper.
Cook on High for 3 hours; reduce heat to Low and cook 2 to 3 more hours. Or, cook on Low for 6 to 8 hours.
