Ingredients
- 1 cup quinoa
- 2 cups unsweetened coconut milk
- 4-6 dates, pitted
- 1/2 cup unsweetened coconut flakes
- 1/4 tsp cinnamon
- 1/4 tsp ground ginger
- 1 tsp raw virgin coconut oil
- Seasonal fruit (optional)
- Toasted pecans or walnuts (for topping)

Preparation
Step 1
Place
quinoa in heavy-bottomed pan with coconut milk and dates. Simmer for approx 15
minutes or until all milk is absorbed. Remove from heat, stir in the remaining
ingredients, except for coconut oil, fruit and nuts. Replace lid until ready to
eat. Top each bowl with coconut oil, fruit and nuts.
