Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/4 cup (1/2 stick) margarine
  • 1 egg, well beaten
  • 3/4 cup orange juice
  • 1 Tbsp. orange zest
  • 1 1/2 cups chopped fresh cranberries
  • 1 cup chopped walnuts

Preparation

Step 1

Preheat the oven to 350 degrees F. In a large bowl mix together the flour, sugar, baking powder, salt and baking soda. Cut the margarine into the dry mixture until crumbs form. In a small bowl whisk together the egg, orange juice and orange zest. Add the egg mixture to the dry mixture, stirring until combined. Fold in the cranberries and walnuts. Pour the batter into a greased and floured muffin pan. Bake the muffins for 20 minutes.
