Ingredients
- 2 (7-8 oz) salmon fillets
- olive oil
- Salt
- Freshly ground pepper
- A few sprigs fresh dill
- 1 lemon

Step 1
Preheat the oven to 350F.
Lay the salmon fillets, skin side down with some space between them, on a baking sheet or baking dish. Rub with olive oil. Sprinkle with salt and pepper, cover lightly with dill leaves, and add a squeese or two of lemon juice. Bake until firm, 15 to 20 minutes.
While the salmon is in the oven, heat a skillet to high. Slice half of the lemon into 1/4-inch slices. Add 2 Tbsp olive oil to the skillet and brown the lemon slices well on both sides, about 5 to 7 minutes. Remove from heat and set aside.
Remove the salmon from the oven and place on plates. Place the lemon slices to atop the salmon and serve.
