- 4 6-oz tilapia fillets
- kosher salt and black pepper
- 2 red bell peppers, thinly sliced
- 1 onion, thinly sliced
- 1/2 c fresh flat-leaf parsley, chopped
- 2 T fresh lime juice

Preparation
Step 1
Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. S
Season the fish with 14 teaspoon each salt and pepper and cook until opaque throughout, 4 to 5 minutes per side.
Meanwhile, heat the remaining tablespoon of oil in a second large skillet over medium-high heat.
Cook the peppers and onion, stirring often, until tender, 8 to 10 minutes.
Stir in the parsley, lime juice, and 1/4 teaspoon each salt and pepper.
Serve with the fish.
