Ingredients
- 1 lb smoked link sausage, cut into 1/2 inch slices
- 1 medium onion, chopped
- 1 green or red pepper, chopped
- 1 clove garlic, minced
- 2 15-oz cans kidney beans, drained
- 1 16-oz can tomatoes, undrained and chopped
- 1/2 tsp dried oregano
- 1/2 tsp pepper
- hot cooked rice

Preparation
Step 1
Cook sausage over low heat 5-8 minutes or until browned. Add onion, green/red pepper, and garlic; saute until tender. Drain, if necessary. Add beans, tomatoes, and seasonings; simmer, uncovered, 20 minutes. Serve over rice.
