Ingredients
- 1 1/4 lb. thin chicken breast cutlets
- 1/2 c. barbecue sauce
- 1/3 c. low-fat buttermilk
- 2 green onions, finely chopped
- 1 Tbsp. cider vinegar
- 1/4 tsp. salt
- 1 large head romaine, chopped
- 1 medium red pepper, seeded and chopped
- 1 c. fresh or frozen (thawed) corn
- 4 plain or spinach soft wraps

Preparation
Step 1
Preheat oven to 425 degrees F. In a large baking dish, toss chicken with 1/4 cup barbecue sauce. Bake for 20 minutes or until cooked through.
Meanwhile, in a large bowl, whisk 1/4 cup barbecue sauce, butter milk, green onions, cider vinegar, and salt. Transfer cooked chicken to cutting board; chop into bite size pieces.
To the bowl with the dressing, add romaine, red pepper, corn, and chopped chicken and toss until well coated.
To serve, divide among wraps and fold to enclose.
